Veggie of the Month

August vegetable of the month is CELERY, a longtime staple in household around the globe. Celery is a member of the carrot family and related to parsnips and parsley.

Although celery is predominately grown in California and Florida it was first recorded as a plant in France in 1623. Its seed was brought to Kalamazoo, Michigan, in the 1850s from Scotland, and it became a commercial crop there.

½ cup sliced, raw celery contains 6% of the daily recommended amount of Vitamin A and 4% of the recommended amount of Vitamin C.  A great low calorie, no fat snack that give you 4% of the daily recommended amount of fiber.

 

Vegetable Medley with Salsa Dip

 

Ingredients:

carrots, cut into 3-inch sticks

celery stalks, cut into 3-inch sticks

1/2  jicama, peeled and cut into 3-inch sticks

1 bunch radishes, trimmed

green onions, trimmed

1 cup fat-free sour cream

1 cup fresh salsa


Directions:

Arrange cut vegetables on a platter. In a small bowl, mix sour cream and salsa. Serve.
